Birch Syrup 101
What is Birch Syrup?
Birch syrup is a rare natural sweetener made by concentrating the sap of birch trees.
Every spring, as Alaska begins to emerge from winter, sap moves through the birch trees for just a few short weeks. We collect that sap from the boreal forests surrounding Talkeetna, Alaska, then concentrate it into pure birch syrup.
The process sounds similar to maple syrup, but birch is a very different product.
Fresh birch sap contains only about 1% natural sugar. It takes at least 110 gallons of sap to produce just one gallon of pure birch syrup, making birch syrup one of the rarest tree syrups in the world.
Our pure birch syrup contains one ingredient: concentrated organic Alaska birch sap.
Birch Syrup vs. Maple Syrup
Birch and maple syrup both begin as sap collected from trees, but that is where many of the similarities end.
Maple sap is naturally sweeter and generally takes around 40 gallons of sap to produce a gallon of syrup. Birch sap is much more dilute, requiring at least 110 gallons of sap for every gallon of syrup we produce.
Their sugars are different too.
Maple syrup is composed primarily of sucrose. Birch syrup is composed primarily of fructose and glucose, simple sugars that also occur naturally in fruits.
Our own laboratory testing of Kahiltna Birchworks Late Run Birch Syrup found fructose and glucose with no detectable sucrose.
Those differences in sugar composition, along with the enormous amount of concentration required, help give birch syrup a flavor completely unlike maple.
Maple tends to be familiarly sweet.
Birch is less about simple sweetness and more about flavor.
What Does Birch Syrup Taste Like?
There isn't one answer.
One of the most fascinating things about birch syrup is that its flavor changes dramatically during the few weeks of the spring harvest.
Early season syrup is lighter, sweeter and more delicate. As the season progresses, the syrup becomes darker, richer and increasingly complex.
Depending on when it was harvested, you may find flavors reminiscent of honey, caramel, toffee, molasses, dark fruit, citrus, coffee and savory umami.
That is why we don't blend our entire harvest into a single syrup.

More Than Sugar and Water
Birch sap naturally contains more than sugar.
It contains naturally occurring minerals and other plant compounds drawn from the tree. When that sap is concentrated into pure birch syrup, some of those naturally occurring nutrients remain in the finished product.
Our pure birch syrup contains naturally occurring manganese, thiamin, magnesium, zinc, copper and other micronutrients.
Birch also has a distinctly different sugar profile from maple syrup.
Rather than being dominated by sucrose, the sugars in birch syrup are primarily fructose and glucose. Fructose is the simple sugar naturally associated with fruits, while glucose is another naturally occurring simple sugar found throughout plants and foods.
We think that difference is interesting in its own right. Birch syrup is still a concentrated natural sweetener and should be enjoyed as one, but it is chemically and nutritionally different from ordinary table sugar and from maple syrup.
Beyond Syrup: Birch Brew
Syrup is one way to capture the spring harvest, but it isn't the only one. The same sap we collect around Talkeetna can be fermented rather than concentrated, and that's where Birch Brew comes from.
Instead of boiling the sap down, we let a culture work on the sugars in fresh birch sap. What's left is a light, low-sugar fermented beverage that keeps the clean, mineral character of the sap while gaining the depth and subtle tartness that only fermentation brings.
How Is Birch Syrup Made?
Making birch syrup is largely an exercise in removing water.
Fresh sap comes from the tree clear and almost water-like. During our short spring harvest, it is collected from thousands of taps in the birch forests around Talkeetna.
We first use reverse osmosis to remove much of the water efficiently. The concentrated sap is then carefully finished into syrup.
Because birch contains different sugars than maple, it requires particular care during processing. Those sugars can develop deep flavors quickly as the sap becomes increasingly concentrated.
The result is the dark, complex syrup in the bottle.
Uses of Birch Syrup
Birch syrup is incredibly versatile, but it helps to stop thinking of it only as a pancake syrup.
You certainly can drizzle the lighter Runs over pancakes, waffles, yogurt or ice cream. But birch really shines in the kitchen. Use it to glaze salmon or roasted meats. Whisk it into vinaigrettes and marinades. Pair it with aged cheese. Add it to barbecue sauces. Bake with it. Stir it into coffee. Use it to add depth to an Old Fashioned, Whiskey Sour or other cocktail.
Its combination of sweetness, acidity and savory complexity allows birch syrup to work in places where a conventional sweetener may not.
