Alaska Pure Birch Syrup
Pure, wild-harvested birch syrup is our signature product, and where we started our business all those years ago. We collect the sap for nearly a month in the cold Alaska spring and evaporate it into a delightful syrup. Choose from Early, Mid or Late Runs. See below Birch Syrup Run Guide for more information.
Early Run
Collected early in the spring harvest, Early Run is the lightest and sweetest of our standard pure birch syrups. It has a more delicate flavor with less of the deep, savory character that develops later in the season.
Best for: Cheese, fruit, ice cream, yogurt, breakfast items, cocktails, desserts, and finishing dishes where you want the birch flavor to stay lighter and more subtle.
Mid Run
As the season progresses, the syrup develops more depth and complexity. Mid Run strikes a balance between the lighter sweetness of Early Run and the bolder character of Late Run, making it our most versatile pure birch syrup.
Best for: Glazes, vinaigrettes, roasted vegetables, baking, pork, chicken, and everyday cooking.
Late Run
Harvested later in the season, Late Run is darker, richer, and more robust, with deeper caramelized and savory notes. Its bold flavor stands up especially well in savory dishes and marinades.
Best for: Salmon, beef, barbecue sauces, marinades, roasted vegetables, hearty glazes, stir fry and savory cooking.
All three runs are made from 100% pure Alaska birch sap and are USDA Certified Organic. The changing flavor comes naturally from the progression of the spring harvest.
