Birch Syrup Spit Salt
Made by our friends at Alaska Salt Co., they hand-harvests sea salt from the Homer Spit and infuses it with our Late Run Alaska pure birch syrup. The result is a finishing salt with a caramel edge, savory and faintly sweet at once. Good on almost anything: vanilla ice cream, dark chocolate, eggs, salmon, roast poultry, popcorn.
The Homer Spit is a narrow strip of land that runs four and a half miles straight into Kachemak Bay. Alaska Salt Co. draws seawater from it and evaporates it by hand into flake salt, which they call Spit Salt. This variety is infused with our Late Run Alaska pure birch syrup.
What makes it work is that birch syrup is savory in a way maple isn't. Cooked down from wild sap, it carries a mineral, almost molasses-like depth, so the salt lands somewhere between sweet and umami rather than simply sugary. Use it as a finishing salt, added at the end rather than during cooking, so the flakes stay intact and you taste them individually. A pinch on chocolate or a caramel is where it surprises people most.
