Ingredients
5 cup rolled oats
2/3 cup each (or more!) chopped almonds, pecans, and walnuts
1 cup shredded coconut
2/3 cup sesame seeds
2/3 cup pumpkin seeds (chia, hemp, and flax seeds also work well!)
1 cup chopped dried apricots, currants, raisins, cherries, or dried blueberries
1/2 cup honey
1/2 cup birch syrup
1/4 cup sunflower oil
Directions
Soak apricots. Heat syrup with honey and mix well into dry ingredients. Bake at 350 in a 9×13 baking dish, coated well with the oil; stir every 10 minutes until golden brown. Add apricots or other dried fruit for the last 10 minutes of cooking. Let cool completely before removing from pan.
