Blueberry Bread Pudding
Ingredients
- 6 Eggs
- 2 ½ cups Whole Milk
- 1 tbsp Pure Vanilla Extract
- 1 tsp Salt
- 1 loaf Challah or Brioche (cubed ½”)
- ¾ cup Alaska Wild Harvest Blueberry Jam
- 1 ½ cups Fresh Blueberries
- Powdered Sugar (topping)
- Pure Birch Syrup (topping)
Instructions:
- Preheat the oven to 350°F.
- Grease a 9×13” baking dish and set aside.
- In a large mixing bowl – beat the eggs.
- Whisk in milk, vanilla extract, and salt.
- Add the cubed bread to the egg mixture and toss until all of the bread is fully coated and soaked.
- Add in 1 cup of fresh blueberries and transfer the mixture to the baking dish.
- Place spoonfuls of the blueberry jam on top. Then, evenly scatter the remaining ½ cup of blueberries over the surface.
- Bake for 40-45 minutes until cooked through and slightly golden.
- Once cooled, add powdered sugar, a drizzle of early-run birch syrup and enjoy!
